Just after Christmas, my son and I planted a round of vegetable seeds for our soon-to-be raised beds. We used some discarded egg cartons for the seeds, kept them moist and placed them in a sunny window. Then, just as the directions on the back of the package promised, we had sprouts 7-10 days later! Such fun for my six year old to plant, anticipate and witness. Dallas has three full growing seasons and winter is the perfect time for kale and other cold weather crops. We planted Red Russian Kale, Spinach and a group of mixed lettuces all from The Seedsaver's Exchange catalog.
